Few large organizations are very efficient about anything related to HR or management. But I'm not sure where you're getting "one month" from.

If all companies do this, then interviewing at 5 companies eats 5 weeks of time.

Presumably the project is the last step, when they are basically just checking that you are as good as you say you are. Like checking references. At that point you should already be 90% certain to be hired, not 20%.
