I also live in the EU. betfair.com is not blocked by my ISP here. Rather, they are blocking my ISP ("[...] you may be accessing the Betfair website from a country that Betfair does not accept bets from [...]"). That the website not only prevents betting but also does not show any odds is a technical decision on their part. Gambling regulation is also usually domestic, and not EU law.
Websites deciding EU users are not valuable enough to comply with GDPR is, as you say, also not censorship. It is again the technical decision of some website owners to provide their content only in conjunction with illegal processing of your data.
I have not had issues accessing torrent indices from the EU. This too is usually handled domestically and has little to do with the EU.
There is legitimately dangerous (current and upcoming) EU legislation (Chat Control, eIDAS, age verification, previously the Data Retention Directive), so I don't think it necessary to weaken your argument by listing non-examples.

Being new to this space, it's hard to learn quickly when the feedback cycle involves having PCBs manufactured, shipped, soldering them and then finding out what could have been better. (Or it works and you never find out what you did wasn't the right way to do it)

This is one of those awkward things where if you post to r/diyelectronics you might get someone doing it for free, but as soon as you try to pay for it both parties realize the going rate for experienced EEs is somewhere around $100/hour.
To be clear, we will redact personally identifying information and do other things to prevent someone's past HN activity from causing them any trouble in the future. We certainly don't want to cause anyone any trouble and will do whatever we can to prevent that. Our concern is only to avoid gutting past threads and ruining them for the others who participated in in them and for future readers who may find the content of the discussions interesting.
Which is great. The redaction of information from places like Reddit that has taken place makes some discussion/references unreadable now. Decade old HN threads still retain all their juicy context.
Can you confirm you have sought legal advice on whether the policy of not deleting user data on HN is compliant with GDPR and whether is indeed compliant (or not)?
YC has a legal department, and they do ongoing analysis to determine our position relating to the different privacy regulatory systems around the world. As I said in the other reply, we’re willing to go to great lengths to protect people’s privacy.
FWIW this is widely accepted best practice, and Art. 85 GDPR is also very clear that data processing for journalistic, academic, artistic or literary expression is exempt.
